Baked Zucchini with Feta Muffins







Serve 4

Prep and cook time: 40 minutes

Ingredients

  • 2 medium-sized zucchinis

  • ï‚· 1/2 teaspoon salt

  • ï‚· 1/4 teaspoon black pepper

  • ï‚· 2 large eggs

  • ï‚· 1 cup crumbled feta cheese

  • ï‚· Spinach

  • ï‚· Spring Onion

  • ï‚· Garlic

  • ï‚· 1 cup of plain flour

  • ï‚· Tasty Cheese (if you love cheese like us)

  • ï‚· Olive oil (for drizzling)

  • ï‚· Lainey’s Chilli Oil (to dip)



Method

1. Preheat your oven to 200°C. Lightly grease a baking sheet or line it with baking paper like us!

2. Wash the zucchinis and either grate them or slice them. Ring them out and dispose of excess

water (you can do this with a tea towel).

3. In a shallow dish, combine the flour, salt, and black pepper. Mix well.

4. In a separate bowl, beat the eggs until well combined.

5. Add in all of the fresh produce, mix

6. Sprinkle the crumbled feta and any other cheese in, mix.

7. Drizzle a little olive oil over the top of the zucchini and feta muffins

8. Bake in the preheated oven for about 15-20 minutes or until the muffins, (don’t remove

them until they are golden brown.

9. Once baked, remove from the oven and let them cool for a few minutes before serving
