Lainey’s Omelette with Chinese Sausage


Serves 2 - 4

Prep & Cook Time 20 minutes


Ingredients

  • 2 tbsp oil (vegetable oil or olive oil, your choice)

  • 4 eggs, beaten in a bowl

  • ½ tsp fish sauce

  • ¼ tsp salt

  • tsp pepper

  • ½ tsp sugar

  • 1 small white onion, diced

  • 2 Chinese sausages, sliced diagonally into 1 cm thick

  • 100g beans, sliced thinly

  • 3 tbsp spring onions, roughly chopped

  • 1 tsp Lainey’s chilli oil

  • ½ red long chilli, cut in half and deseed, then julienned thinly for garnish

  • ½ bunch coriander, roughly chopped for garnish (optional)


Method

  1. In a medium bowl, crack 4 eggs. Add fish sauce, salt, sugar and pepper. Mix into the eggs and use a whisk or fork, beat well to combine all the seasonings. Then set aside

  2. Heat up a frying pan on medium heat, then add the olive oil

  3. Throw in diced onions, sautéed for 1 minute, then add Chinese sausages, cook for another minute

  4. Next add the following ingredients in this order, sliced beans and spring onions. Keep tossing for a minute and then add the egg mixture. Make sure to evenly spread the egg mixture over ingredients to cover frying pan

  5. Then lower the heat to let eggs cook, until the surface of the eggs are not runny

  6. Drizzle 1 teaspoon Lainey's chilli oil. Then turn off and plate up. Garnish with coriander and julienned chilli
