Ingredients
2 pre-baked 20 cm thin Pizza crust
1 jar 250g tomato paste
1/2 roast chicken, shredded
1/4 red onion, thinly sliced
1/4 pumpkin, cut into 2 cm wedges and then roast
1 whole red capsicum, put the whole capsicum in the oven to roast, after cut in half to remove seeds and then cut into 2 cm strips
1 whole zucchini, cut into 1 cm slices and then roast
1/4 tsp cracked black pepper
50g parmesan cheese
1 tsp Lainey’s Chilli Oil
1/2 bag rocket leaves
Method
Preheat oven to 200C
Place pizza crust on a baking tray, and spread 1 tablespoon tomato paste
Top with chicken, onions, pumpkin, capsicum, zucchini, pepper, Lainey's chilli oil and then parmesan cheese
Bake for 20 minutes or until cheese is melted and the edges are lightly crusted
Cut into slices, garnish with rocket leaves
